Some were gifts or flea market finds, some are guides to cuisines that I developed a short-lived infatuation with and some are books that I reference again and again. The recipes do require some prep work with the iyet and you absolutely need a local Indian or Asian grocer to find ingredients.

You can buy mango powder online if there is no Indian foods store in your neighborhood. Once upon a time I had a hankering for some curry, so I was at the library and I grabbed this curry book. I’ve not made any of the egg or game curries, but all the chicken ones I’ve made have been excellent.
With this book Iyer proves once and for all that “curry” is as inspecific a term as gravyor even sauce. Refresh and try again. Thank you, good sir, I can’t wait to accomplish more than one dish. For some of the curries you’ll need to make a visit to an Indian grocer because some of them aren’t ones you could pick up at your local grocery store. The list goes on and on and each one is equally delicious. Fun fact, my family used to raise sheep, and when we were loads younger, we’d send some to market and feast on lamb, of which my mother makes the best leg of lamb ever. There’s no way someone is going to have all those sitting in the fridge at any given time, especially since some only show up in one or two of the recipes. My go-to naan recipe is on the guardian.
As a fan of the movie Bend it Like Beckham this one was a must! Still, the spice mixes can be saved so I just plan to find some other recipes from the book to use them up. He has two recipes for paneer at the start of the chapter paneer made with whole milk and paneer made with half-and-half.
And, bonus, they’re healthier too. Curry isn’t just buying curry powder and slapping it on some chicken.
Cook the Book: ‘660 Curries’ by Raghavan Iyer
As a former cookbook collector, it is rare for me to use a cookbook extensively, over many years. The rsghavan I made were very tasty, but Trivia About Curries. I’m never a fan of recipes which have you make a big batch of some spice blend or paste, and then each recipe only calls for a teaspoon or two of said blend.
I was so so excited about this book after spying it in someone’s returns at the library. It’s one of the most rgahavan chapters in the book with good reasonand although there are some recipes I haven’t tried due to food preferences in my home broccoli, cauliflower, greens, squashes, mushrooms, etc.

Yes, this cookbook contains a fair number of ingredients you won’t find at your local supermarket, but sourcing them out is absolutely worth it there bu no words for how much I love curry leaves.
Lists with This Book. In the charmingly written introduction, it becomes apparent that outsourcing really is the iyr, as he enlists family, friends, distant relatives, and strangers to help compile this massive compendium.
The best Indian cookbook I have tried and also the most used cookbook in my house! I’ve only made about a half-dozen of the recipies from this book, but all of them have been delicious. I’ve already made the “One Pot Potatoes in a Red Lentil Sauce with Lime Juice” a few times because it’s so delicious and easy although why it’s called “one pot” I do not know – you have to cook the lentils and So, I’ll admit that I haven’t tried that 606 recipes from this book yet.
More’s the pity, because some of those curries look super delicious. Here are the three I tried: Three Gold Yier Josephine Moon.
I make three recipes when I cook from this book a protein, veg, and starchand it takes me roughly two hours from start to finish. This is just an order of magnitude better in scope and instruction, and I am very excited. This could be a very extended “currently reading” with recipes to choose from.
